- 2 medium-large potatoes
- margarine OR coconut oil
- "Daiya" cheddar cheese
- 1/2 cup broccoli steamed
In baking pan or casserole dish:
- Microwave potatoes on High for 12 minutes.
- Microwave or stovetop steam broccoli.
- Slice potatoes in half and score (criss-cross) insides.
- Spread with margarine or oil.
- Top with broccoli and "Daiya" cheese.
- Broil on High for 3-5 minutes until cheese is melted.
- Serve on a bed of arugula.
- Variation: Vegan Mozzerella instead of cheddar.
